SHELLED PECAN HALVES & PIECES:
Our present variety in is the "Cheyenne."
They are a smaller pecan than
our first variety but are known for being very sweet. They are also
paper-shell & very easy to crack & bear very light colored meats.
HALVES: There are many different varieties of pecans, and we carry several of the varieties throughout the season, generally one variety
at a time. The varieties we carry are all paper-shell pecans. They
are chosen for quality & not necessarily for size-most are
"mammoth" (large) but some varieties such as the "cheyenne"
are smaller.
LARGE FANCY PIECES/MEDIUM CUT PIECES:
Fancy pieces are large broken pecan pieces that have not been cut. We also carry a "Medium Piece" a good size
uniformly chopped
piece perfect for cookies and breads. These are a big seller in our store!
Please be sure to specify whether you would like "Fancy large pieces" or "Medium pieces."
IN-SHELL &
CRACKED PECANS
OUR IN-SHELL & CRACKED PECANS ARE
READY! We carry In-shell & cracked pecans only during the peak pecan season.
(October- March) New crop Pecans are generally
ready in mid-October. Through the season from October-January we carry five to six different varieties (all paper-shell pecans), generally one variety
at a time. CRACKED PECANS are still in the shell but have been cracked open.
PECAN MEAL:
Pecan meal (also called "pecan
flour') is produced when pecans are shelled...it is very fine ground
pecan with no pieces. It can be used for breading on chicken or
fish, for cheeseballs, or mixed into pancake or cookie batter for a pecan
taste.
A NOTE ON KEEPING YOUR PECANS
Shelled pecans are best kept refrigerated or better yet, zip-locked and frozen. If stored correctly, they can remain fresh for
up to a year. Be sure to store away from onions or other pungent/strong smelling
foods as they will absorb odors very easily. In-shell pecans should be kept in a
cool dry place.
