| SHELLED PECAN HALVES & PIECES:
Yes, the New Crop is in! But it is a BAD PECAN YEAR. Our
quality is as good as alwasys but because of the extreme drought Texas has been through, the 2011 pecan crop
is going to be horribly small & record short. Talking to our
growers, the crop will be so thin, that several are not even going to
harvest this year. Availability will be an issue. This has caused
the price to jump. Do not wait on buying pecans this year.

PAWNEE There
are
many different varieties of pecans, and we carry several of the varieties throughout the season, generally one variety
at a time. The varieties we carry are all paper-shell pecans. They
are chosen for quality & not necessarily for size-most are
"mammoth" (large) but some varieties such as the "cheyenne"
are smaller.

uniformly chopped
piece perfect for cookies and breads. These are a big seller in our store!

Through the season from October-January we carry five to six different varieties (all paper-shell pecans), generally one variety
at a time. CRACKED PECANS are still in the shell but have been cracked open.
PECAN MEAL:
Pecan meal (also called "pecan
flour') is produced when pecans are shelled...it is very fine ground
pecan with no pieces. It can be used for breading on chicken or
fish, for cheeseballs, or mixed into pancake or cookie batter for a pecan
taste.
A NOTE ON KEEPING YOUR PECANS
Shelled pecans are best kept refrigerated or better yet, zip-locked and frozen. If stored correctly, they can remain fresh for
up to a year. Be sure to store away from onions or other pungent/strong smelling
foods as they will absorb odors very easily. In-shell pecans should be kept in a
cool dry place.
